Adrian's cooking is directly influenced by where he's from - the beauty of Cavan, the Cuilcagh Mountain, all 365 lakes and rich green countryside. The abundance and richness of the wild, raw ingredients that are found in this region are pure and perfect as nature intended.
We believe in cooking with the seasons, which means our menus are ever changing. Sourcing the ingredients in it's ripest form from the most sustainable sources.
